We love muffins! When we started planning our bakery, Megan would lovingly reference one of her favorite cookbooks, “The Muffin Lady: Muffins, Cupcakes, and Quick Breads for the Happy Soul” (1997) by Linda Fisher. We originally set out to bake mainly muffins and cookies, but since opening, we’ve added an array of other pastries, but it’s our muffins that bring us the most comfort to our tummies. So, we are going to tell you about a few of our favorite muffins in this, and upcoming, blog posts!
The Muffin! The Sgt. Pepper’s Strawberry Fields muffin is a black pepper walnut muffin with a dollop of organic strawberry jam in the center, and a dollop of strawberry jam and crushed walnuts on top. All our vegan muffins are made with spelt flour (1 cup of spelt flour has nearly the same amount of protein as 1 cup of lentils) and Very Dark maple syrup, which provides beneficials like calcium, magnesium, and iron.
The Muffin’s Origin! When I first developed this recipe, instead of strawberry jam, the black pepper walnut muffin was dotted with slices of fresh strawberries. But during one of our muffin tastings, someone suggested that we make a strawberry jam center, rather than using fresh berries. We tried out this suggestion immediately, and really liked the results!
The Muffin’s Name! What in the world do you name a strawberry and black pepper muffin studded with walnuts? Megan’s older brother, Jason, suggested we name it “Muffin 51,” because it’s so alien! While we appreciated the clever name, it didn’t give an apt description of the muffin, so we consulted a friend in Seattle – Richard Penner – and he, being a fan of the Beatles and our muffins, suggested “Sgt. Pepper’s Strawberry Fields Muffin.” And it stuck!
The Muffin’s Taste! Some people are wary of a muffin that’s spiced with black pepper, but the sweetness of the maple syrup and the strawberry jam, balance the slight heat of the black pepper perfectly. It’s still a breakfast muffin; hearty and slightly sweet and spicy.
